Trip Overview
Over the past twenty years, Peru has earned a reputation as one of the world’s most exciting culinary destinations. Influential chefs—among them Gastón Acurio, Virgilio Martínez, and Pia León—have helped showcase the country’s astonishing biodiversity and elevate Peruvian gastronomy onto the global stage. But beyond its celebrated cuisine, Peru is also deeply tied to the history and culture of cacao, a product that predates the Inca Empire and forms part of the culinary identity of the Amazon and Andes alike.
Peru is home to a remarkable variety of cacao strains, including criollo and chuncho, two of the most prized aromatic cacaos on Earth. Many of these varieties grow naturally in the Peruvian Amazon, especially in regions like Cusco, Junín, and San Martín. Indigenous communities have cultivated cacao for centuries, using it not only as food but also in rituals, celebrations, and trade. Today, Peru is recognized as one of the top producers of fine and flavor cacao, appreciated by artisan chocolatiers around the globe.
Our Mini Chocolate Making Class, held in the heart of Cusco, taps into this rich tradition. In just two hours, you will learn the basics of chocolate-making using locally sourced cacao and discover how this extraordinary ingredient travels from jungle farms to artisanal chocolate workshops. It’s a perfect hands-on experience for travelers with limited time who want to connect with Peru’s gastronomic heritage through taste, creativity, and fun.

Your Day-by-Day Adventure
Peru is renowned for producing some of the world’s finest cacao, making Cusco an ideal place to learn the art of chocolate-making. During this interactive class, you’ll create your own chocolates from scratch, choosing from more than 15 traditional Andean and Amazonian flavors—including chili, coca leaf, sweet cacao nibs, and muña, an aromatic Andean mint.
Your instructor will guide you through each stage of the bean-to-bar journey, offering a close-up look at the transformation of cacao:
- Roasting the beans to develop their natural aroma
- Removing the husk to reveal the cacao nib—pure chocolate in its rawest form
- Grinding the nibs to create a smooth paste
- Using a melange (stone grinder) to refine texture and flavor
You’ll then mold and decorate your own chocolates, experimenting with local ingredients and flavor combinations. A highlight is preparing a rich and traditional Peruvian hot chocolate, a drink deeply associated with holidays and family gatherings throughout the country.
By the end of the workshop, you’ll leave with your own handmade chocolates—perfect to share with friends and family, or to enjoy as a sweet souvenir of your time in Cusco.
